Pita Chip Nachos

Pita chips (store-bought or homemade)
4 cups
Cherry tomatoes, halved
1 cup
Red onion, finely diced
Cucumber, diced
Kalamata olives, pitted and sliced
1/2 cup
Feta cheese, crumbled
1/2 cup
Parsley, finely chopped
1/4 cup
Hummus (any variety)
1 cup
Greek yogurt
1 cup
Cucumber, grated and drained
Cloves garlic, minced
Olive oil
2 tablespoons
Lemon juice
1 tablespoon
Salt and pepper
to taste
Fresh dill, chopped

1. Prepare the Tzatziki Sauce:

In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and a pinch of salt and pepper. Mix until smooth. For an extra flavor, add chopped dill. Refrigerate until ready to use.

2. Assemble the Nachos:

  • Spread the pita chips evenly on a large serving platter. Avoid overlapping too much to ensure each chip gets its share of toppings.
  • Dollop spoonfuls of hummus over the pita chips. You don’t need to cover every chip completely; the idea is to have a bit of hummus in most bites.
  • Scatter the cherry tomatoes, diced cucumber, red onion, and Kalamata olives over the chips.
  • Sprinkle the crumbled feta cheese and chopped parsley evenly across the top.

3. Drizzle and Serve:

  • Just before serving, drizzle the tzatziki sauce generously over the top of the nachos. The goal is to have a mix of flavors in every bite, but not so much sauce that the chips become soggy.
  • Serve immediately, ensuring everyone gets a bit of the toppings and the delicious tzatziki sauce with their pita chips.

Serving Options

  • This dish is best enjoyed fresh. However, you can prepare the tzatziki sauce and the vegetable toppings ahead of time. Assemble just before serving to keep the pita chips crisp.
  • For an added protein, consider adding shredded rotisserie chicken or chickpeas over the top before adding the feta and parsley.
  • Pair with a refreshing Greek or Mediterranean salad to round out a light meal, or serve as a standout appetizer at your next gathering.
